I am a Chef of 12 years. These are high quality peppers that are not so dried out that they aren't pliable. They have a good amount of "meat" on the skins and make a great enchilada sauce! Just don't forget to pick off the stem and de-seed. Then add some chopped onion and a couple cloves of garlic and then cover with chicken stock. I usually cover 1" over the peppers and onions and bring to a boil. Then let rest for 20 min. Blend with a immersion blender or food processor, then whisk through a fine mesh sive. If the sauce is not thick enough, either reduce by simmering or add a light roux to thicken. I usually add a tiny bit of mexican oregano, cumin, and salt.

Ive had outstanding results in cooking with this quality pepper. Love the company that grows and produces them, because I've never gotten bad product. They are so fresh, wonderfully scented and delicious, beautifully colored.

I like these peppers quite a bit. They have a nice mellow flavor and give good color. The 4 star rating has more to do with my not having much of a basis for comparison than any quality of the product.

Really nice, pliable chilies. Feel like leather. Wonderful quality and helped me make such a great Posole. I also ordered the Pasilla Chile and they are the same great quality.

This brand pales in comparison to the Baker's Red Chili Pods from Hatch, NM. I won't buy them again.

Needed these for a recipe and this was the cheapest price I could find and they are exactly what they were suppose to be and in great condition

They are delicious mild peppers, great texture and versatile, very authentic Mexican flavor. It is a big quantity so have some ideas in mind, perfect for cooking for a crowd. i eat them right out of the bag! Probably not for everyone but i find them to be a great snack between cooking with them. one thing i wonder, has anyone made or found a separate use for just the dried seeds?
