While the outer peel of the beans is edible, we recommend peeling it since it has a woody feel that detracts from the interior bean's luscious creaminess. Fava beans, also known as wide beans, lend sumptuousness to foods as diverse as dips, salads, risottos, and pasta when served simply with olive oil, salt, and lemon.
