Great Taste
I reconstituted by directions and by sight. I found that the mix continues to absorb water. I just mixed by hand, a mixer may whip some air in. They had a good taste and I would use them in place of fresh eggs for baking. I was testing for use on a Backpacking trip

Very close to fresh eggs
Using them for scrambled eggs is very close to the real thing. The appearance and texture is exactly like fresh eggs. The flavor is close, but slightly different. My husband couldn’t tell they were powdered until I told him and he thought about it. Then he noticed a slight difference. Fresh eggs are better of course. I wasn’t crazy about the taste for the scrambled egg purpose, but it wasn’t bad. Adding cheese and veggies for an omelette would probably work well. I haven’t tried using them in baking yet, but expect them to be just fine.

Great Egg Powder For Fresh Egg Substitute! Baking Tip: Simply Add Powder With Dry Ingredients!
I cook and bake extensively, all of our meals are eaten at home with food I prepare. Given the current fresh whole egg shortage in California (thankfully cartons of egg whites are readily available!), I decided to purchase Judee’s Dried Whole Egg Powder for use in baking or general egg eating when fresh whole eggs are unavailable. So happy I ordered this! What a relief in the kitchen. Very pleased with this convenient product!- Per the product instructions, 1 whole large egg - 2 Tablespoons powder. I've found this to be accurate.- Reconstituting The Egg Powder: If you need to reconstitute the egg powder, the instructions call for 2 1/2 Tablespoons of water to 2 Tablespoons egg powder for 1 large whole egg. I've found that I prefer a more water, 3 Tablespoons to 3 1/2 Tablespoons. But it's a matter of personal preference.- Reconstituting Tip: When reconstituting the dried egg powder, I stir it thoroughly with a whisk. I then let set for a couple of minutes, and whisk it again to make sure the powder is thoroughly dissolved, and to see if a bit more water is needed.- Baking Tip: I add the egg powder with my flour when baking, and whisk these 2 dry ingredients together to make sure the egg powder is evenly distributed. Add the correct amount of water for reconstituting the egg powder when adding the liquid ingredients called for in your recipe.- These make delicious scrambled eggs for breakfast and egg sandwiches. I add a pinch of dried herbs (chervil usually) when making them in a cast iron skillet heated up with olive oil covering the bottom of the skillet. I've found stirring with a silicon spatula works best when cooking the scrambled eggs. Salt and pepper is added at the table per personal preference.- Storage After Opening: Store in refrigerator after opening. Per product, it has a 6 month shelf life after opening with proper cold refrigerator storage.I highly recommend this product.

More uses than you think!
This is whole egg self stable product is good to have on hand. Even when eggs are plentiful at the market. Once opened has a reasonable use by date. I’ve used it when traveling to for an easy microwave meal using oatmeal plus other easy carry non-refrigerated food. Also during power outages. With a little creativity could make a good camping trail mix.

Taste like a fresh egg...
Taste like eggs! One thing though, the amount of water that the label calls for is not enough. Add a little more water and the eggs will turn out fluffy.

Way too much measuring just for 1 egg.
I always use 3 eggs at a time both for scrambled eggs and in all my recipes, and to measure Judee's powder for 3 eggs is way too much measuring and easy to lose count of how much you're in the middle of measuring. Augason Farms Pasteurized Dried Whole Egg Powder is much less measuring for 3 eggs, so I'm going back to Augason.
