Great for cooking

Terrible
I wish I had read the reviews! This was a soupy gummy mess in a recipe and the baked product had the consistency of chewing gum. Inedible. I tried to make tortillas. Like someone else said, one side was opaque and the other side was gummy and chewy. I see people saying it must be tapioca flour. Maybe. I hate to risk another recipe to try using it for that.

I love this flour alternative
As a Dominican I have grow up eating yucca. My grandmother made sweet buñuelos as well as savory dishes with it it’s that versatile. I have made Brazilian pao de queijo and cassava flour brownies both came out beautifully and tasted really good.

Cassava or tapioca?
Don’t get it twisted, this is tapioca flour and it is a Great tapioca flour!

Starch not flour
I am not sure if there was some sort of mix up at the factory, but the product I received was not Cassava Flour. I have been baking with Cassava flour for years, it is a little different from each company, so I like to try new brands out of curiosity. The brands I have used that are consistently good are Bob's Redmill, Otto's, It's Just Cassava and Anthony's. I make tortilla's every week with Cassava flour and bake bread and pancakes with it. This is not Cassava flour, it is cassava starch or tapioca starch. If you are unfamiliar with tapioca starch, it is basically very similar to corn starch. There is no way to make a tortilla out of starch. I wonder if the company makes both products and this was an accident, I can't imagine anyone using this as a flour.
