PICKWILL Paring Knife, 3.5 Inch Small Kitchen Knife, 5Cr15Mov High Carbon Stainless Steel Fruit Knife with Ergonomic Full Tang Handle, Ultra Sharp

I bought this knife because I've been wanting a truly sharp paring knife, but so far haven't been able to find one at a price I found acceptable.Every manufacturer claims their knives are "razor sharp," but this one actually is and I have the bald spot on the back of my arm to prove it. The last knife I got that was this sharp out of the box was a Buck Vanguard. And if you've ever bought a genuine Buck knife, then you know what I'm talking about.Actually, the edge on this blade reminds me a lot of a Buck. The blade itself is thinner (great for slicing and normal paring-knife tasks) but the edge is extremely similar to my Vanguard.Time will tell how well the edge holds up, but at the moment I'm extremely pleased with the quality, especially for the price I paid.The ergonomics are good. The knife feels secure in my hand and there aren't any hot spots that I've noticed so far. Build quality is far higher than I would have expected at this price point, as are the fit and finish.If the edge hangs around for awhile, or at least is reasonably easy to re-hone, then I'll definitely be buying more Pickwill products in the future.

Excellent knife for small trimming like removing the core from sliced apples and cutting the ends off zucchini and yellow squash. Fits my hand and is well balanced and easy to use. The description says 3.5 " but the knife I received is closer to a 3" blade which is even better for my trimming needs.
