We’ve teamed florets of chargrilled cauliflower, carrot, crunchy red pepper and butternut squash with a subtly-spiced turmeric and ginger coconut cream. This dhal-inspired stew is brimming with Beluga lentils for an earthy boost of plant protein and topped with a layer of fresh spinach, naturally high in vitamin A. Directions Remove card sleeve and lid. Replace lid loosely before heating on full power (Cat E – 900W) for 2 mins. Stir and cover again. Heat on full power for a further 1½ minutes until piping hot throughout. Allow to stand for 30 seconds before tucking in.
